Toffee has been a favorite candy of English schoolchildren for longer than anyone can remember. There are lots of different kinds, but the toffee Digory planted in Narnia and which grew into a toffee tree is the sort you can still buy today all over England. When you find yourself on a journey through the wilds of Narnia and you don’t have any food, a bag of good toffee will keep you going for a long time. You might even find a toffee tree.

About 2 Pounds

1 cup granulated sugar
¾ cup dark corn syrup
8 tablespoons
(1 stick) butter, melted
1 cup evaporated milk
1 teaspoon vanilla

1) Butter a 9” square pan.

2) In a 5–6 quart saucepan, combine the sugar, syrup, butter, and milk. Bring to a boil over medium heat, stirring constantly. Continue to cook, lowering heat if the mixture starts to boil over. Cook until the mixture reaches 330 degrees F on a candy thermometer. Remove from heat and stir in the vanilla. Pour into the 9” square pan.

3) Cool in the pan for 20 minutes. Cut into squares and wrap each piece in parchment paper.
